Apple and blackberry Yogurt cake + custard / Gateau au yaourt pomme-mure, et creme a la vanille
Yogurt cake1 1/2 cups yogurt3 eggs1 apple, grated1/2 cup blackberries, blended with 1 tbsp sugar
Custard1 1/2 cup milk2 tbsp cornstarch2 tbsp sugar2 egg yolks1 tsp vanilla extract
Preheat the oven to 180'C. Prepare your cake tin with baking paper.
Whisk the yogurt, olive oil, sugar, eggs, and vanilla. Add the flour, baking powder, soda, salt, ground almonds and the grated apple, stir to get a nice cake batter.
Pour the batter into the cake pan. Swirl your blackberries/sugar mix into your dough with a spoon. Bake for 50 minutes, until a skewer tester comes out clean. Let it rest for 15 minutes, then transfer the cake to a wire rack.
To make the custardIn a saucepan, heat the milk with the vanilla extract (without boiling it). In a bowl, whisk together the egg yolks, cornstarch and sugar for 1 minute. Pour slowly the warm milk on the egg mix, whisking continuously. Pour the mix back n the saucepan, and continue whisking, on medium heat for about 1 to 2 minutes, until getting the desired consistency.
Serve the cake with warm custard, enjoy!
