Caramel slice - Millionaire shortbread // Tranche au caramel et chocolat

Unfamiliar with this delicious little treat? Let me talk you through it before you make it and try it yourself.
A crumbly layer of shortbread biscuit, topped with a creamy goey caramel layer, finished with a nice layer of pure dark chocolate. Yeah, I know.

Along with Pavlova and Lamington, caramel slice is one of the most iconic and most loved desserts in Australia. With a recipe inspired by the British roots of Australia cuisine, with that crumbly shortbread base, but also the fudgy caramel, found in so many British treats, this sweet treat was among the first Australian specialties I tried. And I fell in love with it. It has probably reached almost to the top of my favourite desserts now. I remember making a caramel slice as my own birthday cake for my 23rd birthday, celebrated in Australia. It was actually the first time making it myself. 
There are many ways to make a caramel slice, also called Millionaire shortbread in the UK, but most recipes join on using condensed milk for the caramel, a touch of Golden Syrup, which brings that sweet layer together. I like using brown sugar in my recipe for a deeper flavour that you don't get with white sugar. The coconut is also a great addition, I think, it brings a bit of freshness, that cuts out that overly sweet side of the caramel, which is also balanced by a touch of salt, and the bitterness of the dark chocolate layer on top.


It might look complicated like that, but honestly, it doesn't take much time, technique or effort, apart from whisking of the caramel for 10 minutes. If you make it once, you'll just want to make if over and over again.

For those who are horrified by the list of ingredients (mostly sugar and butter, let's be honest), I am working on a healthier veganised version of this dessert, on which I am still working to get the best version before I share it with you... suspense!


Jamais entendu parler de cette petite douceur sucrée? Laissez-moi vous parler un peu de ce dessert, avant que vous passiez aux fourneaux et y goûtiez vous-même.
Une délicieuse couche de biscuit au beurre, couverte d'une couche de caramel crémeux, puis d'une couche de bon chocolat noir. Ouais rien qu'ça.

Aux côtés du Pavlova et du Lamington, le Caramel slice figure parmi les desserts emblématiques et préférés en Australie. La recette est inspirée des racines britanniques de la cuisine australienne, avec une base de biscuit au beurre shortbread (recette typique d'Écosse), et le caramel crémeux aussi typique de nombreux desserts au Royaume-Uni. Le caramel slice fait partie des premières spécialités australiennes que j'ai pu goûter quand j'y suis arrivée il y a bientôt 6 ans, et fait maintenant partie de mes douceurs préférées. Je me souviens d'avoir fait mon premier caramel slice pour mon propre gâteau d'anniversaire, quand j'ai célébré mes 23 ans en Australie.


Il y a de nombreuses façons de faire cette tranche au caramel et chocolat, mais la plupart des recettes semblent se rejoindre sur l'utilisation du lait concentré et du Golden Syrup pour la préparation du caramel. J'aime utiliser du sucre vergeoise plutôt que du sucre blanc, pour plus de saveur. La noix de coco apporte un peu de fraicheur, pour contraster un peu avec le côté très sucré du caramel, aussi balancé d'une touche de sel, et l'amertume du chocolat noir.

Ça peut sembler compliqué comme ça, mais honnêtement, faire cette tranche au caramel ne prend pas beaucoup de temps, d'effort ou de technique, à part peut-être fouetter le caramel pendant 10 minutes. Si vous faites ce dessert une fois, vous voudrez le refaire encore et encore.


Pour ceux qui sont horrifiés à la lecture des ingrédients (soyons honnête, c'est quand même principalement du beurre et du sucre), je travaille sur une version plus saine et végétalisée de ce délicieux dessert. J'attends de trouver la version parfaite pour la partager avec vous... suspense!


Ingredients
Biscuit
150 g flour
40 g shredded coconut
90 g brown sugar
1/2 tsp baking soda
125 g melted butter

Caramel filling
150 g butter
300 ml condensed milk
1 1/2 tbsp Golden syrup
80 g brown sugar
1 tsp vanilla
pinch of salt

Chocolate layer
150 dark chocolate
1 tbsp coconut oil

Preheat the oven to 180°C. Line a square or rectangle (approx. 23cm x 33 cm) baking tin with baking paper.
In a bowl, mix the flour, baking soda, shredded coconut and brown sugar. Add the melted butter and mix until combined. Press the mixture into the tin to form an even biscuit layer. Bake for 15 to 20 minutes, until just golden but still a bit soft to the touch. Meanwhile, prepare the caramel.

Put the butter, condensed milk, golden syrup and brown sugar in a saucepan, and slowly bring to the boil, stirring almost constantly. Once the caramel is boiling, keep on cooking it on low-medium heat for 10 minutes, still stirring constantly, until the caramel thickens and gets light brown caramel colour and smell. Remove from the heat, add the vanilla and salt, and pour on top of the partly cooked biscuit. Bake for 10 more minutes.
Remove the biscuit and caramel cake from the oven and let it cool completely. Keep the slice in the baking tin.

Melt the chocolate with the coconut oil in a bain marie (place a bowl on top of a pot with boiling water, making sure the bowl doesn't touch the water). Pour the melted chocolate on top of the cold caramel layer, smooth the top, and place the slice in the fridge for at least 4 hours to set and harden.
Cut the caramel slice into squares, and serve either straight out of the fridge or at room temperature. 



Ingrédients
Biscuit
150 g de farine
1/2 c.à.c bicarbonate de soude
40 g de noix de coco
90 g de sucre vergeoise
125 g de beurre fondu

Couche au caramel
180 g de beurre
300 ml de lait concentré
1 1/2 c.à.s de Golden Syrup
80 g de sucre vergeoise
1 c.à.c de vanille
une pincée de sel

Couche au chocolat
150 g de chocolat noir
1 c.à.s d'huile de coco

Préchauffer le four à 180°C. Couvrir un moule carré ou rectangle (environ 23cm x 33cm) avec du papier sulfurisé.
Dans un bol, mélanger la farine, le bicarbonate la noix de coco râpée et le sucre vergeoise.  Ajouter le beurre fondu et bien mélanger. Presser cette pâte dans le moule pour former une couche uniforme. Enfourner pendant 15 à 20 minutes, jusqu'à ce que le biscuit soit légèrement doré, mais encore un peu moelleux au toucher. Pendant ce temps, préparer le caramel.

Mettre le beurre, le lait concentré, le golden syrup et le sucre vergeoise dans une casserole et porter doucement à ébullition, en remuant continuellement à l'aide d'un fouet. Une fois que le caramel bout, garder sur le feu doux - moyen pendant encore 10 minutes, en continuant de fouetter, jusqu'à ce que le caramel épaississe et prenne une belle couleur légèrement brune et dégage une odeur caramélisée. Retirer la casserole du feu, ajouter la vanille et le sel, et verser le caramel sur le biscuit pré-cuit, et remettre le plat au four pendant 10 minutes supplémentaires. 
Sortir le gâteau du four, et laisser refroidir complètement dans le moule.

Faire fondre le chocolat et l'huile de coco au bain-marie ( mettre un bol au-dessus d'une casserole avec un peu d'eau bouillante, en veillant bien à ce que le bol ne touche pas l'eau). Couvrir le gâteau au caramel de ce chocolat, et le répartir uniformément sur toute la surface., puis placer le gâteau au réfrigérateur pendant au moins 4 heures.
Couper le gâteau en carrés, et servir soit directement à la sortie du réfrigérateur soit à température ambiante.
