Torta di mele // Italian apple cake // Gâteau italien aux pommes

This cake is probably the simplest there is, in terms of ingredients but also in the method. Two bowls and about 10 minutes preparation, for a delicious apple cake that will surprise by its unusual texture. The ratio of apples to batter is high, and that’s what makes this italian cake so different from any other apple cake : a caramelized and crispy crust and top, enclosing a melting, almost fudgy centre. Make sure you slice them as thinly and evenly as possible : a mandolin or a good sharp knife will do!

Since finding this recipe, I have made it a few times, and it’s always been a winner, and has pretty much disappeared instantly. Torta di mele, is a beautiful delicate, yet rustic and simple italian dessert, that literally anybody can make.
As I read through different books and websites, and trying different things, it's with Balaloosta's recipe that I decided to stick to, as it is ridiculously easy, and makes a wonderful cake, where apples simply melt into the batter.

Magic, I tell you.



The lemon pairs surprisingly well with the apples, and brings a much needed acidity and freshness to the cake. I think it would also work with orange or mandarin zest, or maybe a touch of spice like ginger, cinnamon or cardamom.





Ce gâteau est probablement le plus simple qui existe, tant au niveau des ingrédients que dans la préparation. Deux bols et dix minutes de préparation sont nécessaires pour obtenir ce gâteau à la pomme qui va en surprendre plus d’un.e par sa texture unique.

La quantité de pommes par rapport à la pâte est plutôt élevé, ce qui rend ce gâteau vraiment unique pa rapport aux autres gâteaux aux pommes que j’ai goûté : une croûte caramélisée et croustillante, et un coeur moelleux et fondant. Veillez à couper les pommes aussi fines que possible : une mandoline ou un couteau bien affuté seront vos meilleurs alliés dans cette tache.

Depuis que j’ai trouvé cette recette, je l’ai refaite plusieurs fois, et elle a toujours été un succès, le gâteau disparaissant à une allure fulgurante. La Torta di mele est un dessert traditionnel italien, délicat, gourmand et rustique, que même la ou le plus novice des pâtissier.e peut faire.

Après quelques recherches dans différents livres et sur quelques sites, c'est sur la recette de Balaloosta que je me suis arrêtée, dont j'apprécie l'incroyable simplicité, produisant un gâteau moelleux, dans lequel les pommes fondent dans la pâte pour ne former plus qu'un.

De la pure magie j'vous dis!

Le citron se marie étonnamment bien avec les pommes, et apporte une belle note acide et fraiche. J’’imagine que ça marcherait aussi avec du zeste d’orange ou de mandarine, ou pourquoi pas une touche d’épices comme la cannelle, le gingembre ou la cardamome.





Ingredients
5 apples
Zest of one lemon
100 g sugar
100g flour
2 tsp baking powder
100 g butter
1 egg
1 tbsp icing Sugar


Preheat the oven to 180°C and butter a cake tin (round or square, about 20 cm diameter or length).

Put the butter in a small saucepan and let it melt gently. Leave it to cool slightly while you prepare the rest of the recipe.

Peel and core the apples, and slice them as thinly and evenly as possible ( I used a mandolin, but you can do it by hand if you have good knife skills). It is important in this recipe to really cut the apples super thin, as this is what will create a melting, almost “fudgy” texture.

Put the sliced apples in a large bowl and mix with the lemon zest.

In a smaller bowl, mix the flour, sugar and baking powder together, then sprinkle this mix on top of the apple slices, and stir in delicate way so the flour mix covers all of the apple slices, but making sure you don’t break them too much.

Whisk the egg in a bowl, and add in the butter, whisking until smooth. Pour this mix on top of the flour covered apple slices, and stir gently to mix it all in.

Pour the mix in the prepared cake tin and spread evenly. Bake for 45 to 50 minutes, until the cake is golden, but it should still be a little soft in the middle. Let the cake cook in the tin, then transfer to a serving plate and sprinkle with icing sugar.





Ingrédients
5 pommes
Zeste d’un citron
100 g de sucre
100g de farine
2 c.à.c de levure chimique
100 g de beurre
1 oeuf
1 c.à.s de sucre glace


Préchauffer le four à 180°C et beurrer un moule à gâteau (rond ou carré, environ 20 cm de diamètre ou de longueur).

Faire fondre le beurre dans une petite casserole, puis le laisser refroidir légèrement pendant la préparation du reste du gâteau.

Éplucher les pommes et enlever les trognons, puis les couper en tranches, aussi fines et régulières que possible (j’ai utilisé une mandoline, mais on peut aussi le faire au couteau). Il est important de couper les tranches bien fines afin de garantir la texture fondante du gâteau.

Transférer les tranches de pommes dans un grand saladier et y ajouter le zeste de citron, mélanger.

Dans un petit bol, mélanger la farine, le sucre et la levure chimique. Saupoudrer ce mélange sur les pommes, et mélanger délicatement afin de répartir la préparation sur l’ensemble des pommes sans trop les casser.

Fouetter l’oeuf dans un bol et y ajouter le beurre, tout en continuant de fouetter, jusqu’à obtenir un mélange homogène. Verser cette préparation sur les pommes farinées, et mélanger doucement.

Répartir la préparation dans le moule et l’étaler uniformément.

Enfourner pendant 45 à 50 minutes, jusqu’à ce que le gâteau soit bien doré, mais encore moelleux au centre. Laisser refroidir dans le moule puis transférer sur un plat de service et saupoudrer de sucre glace.
