Plum jam scone crown / Couronne sablee a la confiture de prunes

Anyone want a cuppa?





There's nothing better than a nice scone with a cup of tea.

But this is even better than normal plain scones with jam. The jam is actually inside the scone, with some extra dried fruits.

Feel free to have it with some cream too, if you feel naughty and/or want to be taken straight to sweet heaven.

This British style tea-time treat is really easy to make, fruity and buttery.

I used homemade plum jam, and dried cranberries here, but you can pretty much use any jam you have and like, rasperry, strawberry... and throw in some dried blueberries or raisins... Be creative!

Qui veut une tasse de thé?

Il n'y a pas mieux qu'un "scone" pour l'heure du thé.

Alors c'est parti amis francophones, on se met à l'heure britannique et on prend le thé avec ce gâteau sablé fourré de confiture de prune et cranberries (canneberges).

A manger avec un peu de crème fraîche si on se sent vraiment très gourmand ou qu'on veut un aller direct pour le paradis sucré.

Cette spécialité britannique revisitée est facile à faire, au bon goût de beurre et de fruits.

J'ai utilisé une confiture maison de prunes, mais toute autre confiture ira tout aussi bien, comme fraise ou framboise, additionnée de raisins secs ou myrtilles séchées. Soyez créatifs!

Ingredients
300 g flour
1 c.à.c baking powder
1 tbsp caster sugar
30 g butter
180 ml milk
1 egg yolk
80 g plum jam
80 g dried cranberries
Icing sugar to dust

Preheat the oven to 180°C and prepare a baking sheet with baking paper.

Rub the softened diced butter in the flour and sugar until crumbly. Add the milk and egg yolk. Knead until smooth, but not too much. Roll the dough on a floured surface, to a rectangle about 5 mm thick. Spread the jam and sprinkle with the cranberries. Roll the log and connect the two ends together to form a ring. Put it on the baking sheet. Cut little gaps around the crown, every 4 cm.

Bake for 30mins.

Let it cool on a wire rack. Dust with icing sugar before serving.









Ingrédients
300 g farine
1 c.à.c levure chimique
1 c.à.c sucre blanc
30 g beurre
180 ml lait
1 jaune d'oeuf
80g confiture de prunes
80 g cranberries (canneberge) séchées
Sucre glace pour saupoudrer


Préchauffer le four à 180°C. Préparer une plaque avec du papier sulfurisé.

Mélanger le beurre mou coupé en dés avec la farine et le sucre, pour obtenir un mélange sablé. Ajouter le lait et le jaune d'oeuf. Etaler la pâte sur un plan de travail fariné, pour obtenir un rectangle, d'une épaisseur de 5mm.

Etaler la confiture puis parsemer de cranberries. Rouler la pâte pour former un long rouleau. Connecter les deux bouts et former un cercle. Déposer la couronne sur la plaque de cuisson, et découper des petites entailles dans la couronne, tous les 4 cm. Enfourner pour 30 minutes.

Laisser refroidir sur une grille et saupoudrer de sucre glace avant de servir.

Hey oh! Talking to all the brussel sprouts haters there!!



I've never been the biggest fan of brussel sprouts, but never refused to eat them though. It just wasn't on my top 10 favourite veggies. Because I always had them one particular way, boiled or braised. Until now.

I tried different ways of cooking this unfortunately often disliked vegetable, and found a new taste to it, a new crunch. And I really like it.

Plain and simple : don't cook it! Have it raw!
Basically, when you think about it, brussel sprouts are just like mini cabbages. And as you can eat cabbage raw, like in a salad, coleslaw and stuff like that, why not doing the same with the "mini" version of it?

You could just have it in wraps, burritos, sandwiches, use it instead of cabbage in a coleslaw, or in any salad.

I mixed it here with the veggies I had, added some quinoa to make a more filling meal and a nice simple seasoning.

There's no rule to salads, just mix a few things together to create something simple and great!












Ingredients
( for 2 servings)

1/2 cup quinoa
3 brussel sprouts
2 spring onions
1/2 of a small butternut squash
4 cherry tomatoes
2 tbsp extra virgin olive oil
1 tbsp lemon juice
salt, pepper


Preheat the oven to 180'C. Put the butternut squash (or pumpkin if you prefer) in the oven, open face up and let it roast for about 30 min, until soft and golden.

Meanwhile, prepare the quinoa. Rinse the quinoa seeds in a sieve under cold water. Then toast the quinoa for a couple of minutes, in the dry saucepan over high heat, tossing often. This will develop the nutty flavour of the quinoa. Add 1 cup of water to it, cover with a lid and place on the stove on a medium heat for about 15-20 minutes, stirring occasionnaly. The quinoa is ready when tender, a little bit like rice. Let it cool down.

Slice the brussel sprouts very finely. Cut the cherry tomatoes in quarters. Slice the spring onions. Scoop the butternut flesh out of the skin with a spoon, and cu it in little pieces.
Mix everything together, and season with salt, pepper, olive oil and lemon juice.
Enjoy your salad straight away or take it to work for lunch =)











Ingrédients
(2 portions)

1/2 tasse de quinoa
3 choux de Bruxelles
2 oignons nouveaux
1/2 courge butternut
4 tomates cerises
2 c.à.s d'huile d'olive vierge extra
1 c.à.s de jus de citron
sel, poivre


Préchauffer le four à 180°C.
Enfourner la moitié de butternut (ou autre courge, potimarron...), côté intérieur de la courge vers le haut et rôtir pendant 30 minutes, jusqu'à ce que la chair soit bien tendre.
Pendant ce temps, préparer le quinoa. Rincer les graines dans une passoire sous de l'eau froide, laisser égoutter.
Faire chauffer une poêle ou casserole anti-adhésive, y faire "toaster" les graines de quinoa, c'est-à-dire dorer quelques minutes, sans huile, ce qui va développer son goût de noix.
Ajouter ensuite le double du volume en eau, ici 1 tasse d'eau, couvrir avec un couvercle, et laisser cuire pendant 15 à 20 minutes, en remuant de temps en temps pour éviter que le quinoa ne colle à la casserole.
Le quinoa est près lorsqu'il est tendre sous la dent, comme du riz.
Laisser refroidir.

Émincer très finement les choux de Bruxelles ainsi que les oignons nouveaux. Couper les tomates en quartiers.
A l'aide d'une cuillère, enlever la chair de la courge de la peau, puis la couper en petits cubes.
Mélanger les légumes au quinoa, puis assaisonner de sel, poivre, huile d'olive et jus de citron.

Here I am, home. 





After 3 years wandering around Oceania, I'm back in France. Not for long though.
But I'm happy to be back, even more in this beautiful period of the year : fall. The forest is gorgeous, so many different colors in the trees, the days are getting colder but the sun is still out and there's still quite a lot of fruits and veg in the garden and orchard. 


Today I used some carrots from the garden to make KimChi (korean fermented cabbage), and I ended up zith the greens, that I definitely don't want to waste anymore. In my previous house, I used to keep a bag in the freezer, to put all my vegetables scraps (stalks, skin...) in order to make vegetable or chicken stock.

But on this beautiful day, I thought I would try to use my carrot tops fresh, for lunch. So here we are, delicious carrot tops fritters, that you can flavour with whatever you have and like. I mixed it with some "mediteranean style" ingredients, but I'm pretty sure that it would be delicious with ginger, or curry powder, or any other spices.


Me voilà à la maison.

Après 3 ans à me promener un peu partout en Océanie, me voilà de retour en France. Mais pas pour longtemps.

Mais je suis bien contente d'être de retour. Surtout en ce bel automne, les couleurs sont fantastiques en forêt, les journées se font plus fraiches, mais le soleil est encore là et il y a encore plein de fruits et légumes au jardin.

Aujourd'hui, j'ai utilisé des carottes du jardin pour faire du KimChi (chou fermenté coréen), et je me suis retrouvée avec les fanes de carottes que je ne voulais gâcher pour rien au monde. Dans mon ancienne maison, en Nouvelle-Zélande, je gardais toujours un sac plastique au congélateur, ou je mettais tous mes déchets de légumes (épluchures,etc...) que j'utilisais ensuite pour faire du bouillon de volaille ou de légume.

En cette belle journée, je me suis dit que j'allais utiliser ces belles fanes de carottes fraîches du jardin dans une recette simple et assez rapide pour le déjeuner. Et voilà donc la petite invention du jour, beignets de fanes de carottes, adaptables aux envies et goûts de chacun. Je les ai faits en mode "méditerranéen" avec des tomates séchées et des épices marocaines, mais le gingembre, ou la poudre de curry, ou d'autres épices iraient parfaitement aussi. A vos idées!! 


Ingredients 

Greens of about 4 or 5 carrots
300 g chickpea flour
5 sundried tomatoes, chopped
1 tsp mediteranean spices mix (mine has oregano,paprika, basil, garlic, rosemary.. but feel free to use any spices you like!)
1 tsp harissa paste (morrocan chili paste)
100 g feta, crumbled
water, to combine
salt and pepper
olive oil

For the cherry tomato confit
200g cherry tomatoes
2 tbsp olive oil
2 tbsp raw sugar
salt, pepper
1 tbsp chopped fresh basil

Start by making the tomato confit.Slice the cherry tomatoes in half. Heat 2 tbsp olive oil in a non stick frying pan, add the cherry tomatoes, and cook for about 4 minutes on medium heat. Add the sugar, salt and pepper, and let it reduce for about 10/15 mins on low heat, until it gets a bit sticky and thick, like jam. Add the chopped basil and set it aside to cool.

For the fritters, start by chopping up the carrot greens very finely, like you would chop parsley for example. 

In a salad bowl, stir the chickpea flour with the spices and harissa paste, and slowly add some water, until you get a "pancake-like" consistency, not too thick, not too liquid. Add the carrot tops, sundried tomato and feta. Season with salt and pepper. (Check the picture below for the consistency of the dough).

Heat a couploe of tbpsn of olive oil in a non-stick frying pan, and drop some dough with a tablespoon, the size of little pancakes,/fritters. Cook on one side until nice and golden brown, then flip over and cook 2 more minutes on the other side. Continue until there's no more dough.

Serve hot or warm with the tomato confit.





Ingrédients
fanes de 4 ou 5 carottes
300 g farine de pois chiches
5 tomates séchées, coupées en petits dés
1 c.à.c mélange d'épices méditerranéennes (le mien est un mélange de paprika, origan, basilic, romarin, ... utilisez les épices de vote choix!)
1 c.à.c de harissa
100 g de feta émiettée
eau
sel et poivre
huile d'olive

Pour le confit de tomates cerises
200 g tomates cerises
2 c.à.s d'huile d'olive
2 c.à.s de cassonade
sel, poivre
1 c.à.s de basilic ciselé

Commencer par le confit de tomates cerises. Dans une poêle anti-adhésive, faire chauffer l'huile, y ajouter les tomates et faire revenir pendant 4 minutes sur feu moyen. Ajouter le sucre, sel et poivre, et laisser cuire 10 à 15 minutes sur feu doux, jusqu'à obtenir une consistance un peu épaisse et collante, comme une confiture. Ajouter le basilic et réserver.

Ciseler/hacher finement les fanes de carottes, comme vous le feriez avec du persil par exemple.

Dans un saladier, mélanger la farine avec les épices et la harissa, et ajouter de l'eau petit à petit pour obtenir une pâte à beignets ni trop épaisse ni trop liquide. Y ajouter les fanes de carottes, tomates séchées, feta, et assaisonner de sel et de poivre. (voir photo ci-dessus pour la consistance de la pâte)

Dans une poêle anti-adhésive, faire chauffer 1 ou 2 c.à.s d'huile d'olive et déposer des cuillères de pâte, environ 5cm de diamètre. Laisser cuire quelques minutes de ce côté jusqu'à ce que ce soit bien doré, puis retourner comme des crêpes, et cuire 2 minutes de plus de l'autre côté. Répéter jusqu'à ne plus avoir de pâte.

Servir chaud ou tiède avec le confit de tomates.
